The Client: Miss Best (that’s me!)

The Challenge: following on from my (then) popular healthy food blog, Miss Best, I wanted to create an e-book  to prove to people that you can have your cake and eat it – and feel awesome too!

The Solution: I published this desirable collection of deliciously healthy desserts in 2010. It contains easy recipes, lighthearted text, informative introductions and teasingly good photos blended together to win the acclaim of some of the hottest leaders of the health food sector at that time.

Frozen Desserts
When I was a kid I used to seriously fantasize about having an ice cream van with a Mr Whippy soft ice cream machine. I would spend hours creating in my head magical and wondrous ice cream concoctions that would leave Willy Wonka feeling really rather impotent. These little low fat frozen beauties are more than a satisfactory compensation for the ice cream van I never got. Plus these desserts contains no cholesterol, refined sugar, added fat or dairy products (lactose).

How simple these recipes are! They are squished full of fruity goodness with no added sugar or odd additives, and are so quick and easy to make. No ice cream machine (or van) needed! This will give the little monkeys something to fantasize about…

 

Chocolate Chip Ice Dream
Serves 2 hungry monkeys

  • 6 frozen bananas (slice and freeze for at least 12 hours)
  • 2 tablespoons cocoa powder
  • Small pinch of salt
  • ½ teaspoon vanilla powder / 1 teaspoon vanilla extract.
  • 2 tablespoons cacao nibs or chopped dairy-free chocolate

Allow the bananas to stand at room temperature for 5-10 minutes to soften slightly. Blend together in a food processor with the cocoa powder, salt and vanilla to make a soft and smooth ‘ice cream’. This may take a couple of minutes, and you will probably need to stop a couple of times to scrape down the sides. Stir in the cacao nibs or chocolate chips and serve immediately.

Passionate Chocolate  – stir in the flesh from 2 passion fruit before serving for a sexy twist.
